This isn't pure chocolate. This is more like melt and pour chocolate using compound, he doesn't talk much about the actual bar ingredients. Plus this machine isn't tempering machine, it just melts the chocolates and helps with moulding. Nothing against meesogood, they look like high quality chocolatier rather a chocolate maker.
All companies doing that , only 20% chocolate in it.
That is not compound, that's couverture bar, couverture comes in bars as well as pellets. Compounds do not have percentages.
And that machine is a tempering machine, chocolate melting machines are different, they are like a Bain Marie.
