I'd 100% be a navigator. They're so rich, influential, and powerful that even chaos marines know not to fuck with them. Even goddamn chaos doesn't mistreat them.The only person who did anything to piss them off is guilliman.

The best job would be a defense contractor. Warhammer 40k is nirvana for defense contracting. Construction, supply vending, logistics, aviation engineering, mechanical engineering, telecommunications, chemical distribution, etc. War is good for business and the imperium is forever in war. Even if the imperium relies on state ownership, there will always be gaps for the private sector to fill.
If you read the Einsenhorn books, the job as an Inquisitor is extremely rough at times. They do have the capital and resources of the Ordos behind them, but when in the field, they can be extremely harrowing and exceptionally life-threatening. The fact they are facing some of the hardest to find threats the Imperium faces (hidden cults and spies) makes their line of work extremely dangerous and far from being a cushy or easy job. In the first Yarrick novel, (Imperial Creed) one of the inquisitors get assassinated by the Cultist he seeks. In the short story collection of "Treacheries of the Space Marines", one of the short stories involves an Inquisitor chasing after an Alpha Legion. The Alpha legion grooms this inquisitor, leaving breadcrumbs to cases to follow, allowing his reputation to grow until he becomes a Lord Inquisitor while still hunting for the Alpha Legion. The Alpha Legion in the end is killed, but he in turn is killed by an Alpha Legion who will replace said Lord Inquisitor! To be an Inquisitor requires a certain skillset but also some odd quirks (including obsessive compulsion, whether to purge the wicked or to follow until every stone is unturned). Either they can temper this or their compulsion destroys him/her. Just look to Einsenhorn, declared Diabolus by the very institution he serves, or Kryptman, whose obsession to stop the Tyranids led to a series of unsanctioned exterminatus.
The argument between complexity vs difficulty will never be resolved. Some people do difficult but simple jobs. But some others do seemingly easy but very complex jobs. Which one is more demanding and tiresome? A miner does backbreaking work but it's simple. A governor sits comfortable on his throne but he has to manage an entire planet. Put a miner in the governor's shoes and he will want to go back to mining from day 1. Put a governor in a miner's shoes and he too will want to quit. So this argument will never end.

A thousand a day is seemingly big numbers, but it is absolutely *nothing* but a drop in the vast ocean of human lives. Chances of being sent to such a fate is immeasurably small.. even for psychers. It doesn't make it GOOD or FAIR, but it is hardly reason to not wish to support the Imperium when the opposite is to worship Chaos or have no one behind you to support you for the war against Tyranids or Necrons. Humans number in their trillions.. just on the Imperium side alone. Maybe a trillion more unaccounted for or on Chaos side. Since you mention Chaos as a worthy alternative to the mere 1000 lives lost a day to the Emperor.. how many lives are swallowed by the Chaos Gods each day then? Maybe not immediately, but once they die. I would hazard that far more than a thousand a day die at the mercy of either Chaos God alone. Chaos is not meant to be an appealing alternative. It's meant to be absolute chaos and suffering. It is both the brutality (and beauty) of nature, but also the murdering intent of all species. Life in the Imperium is brutal for most, but to think that Chaos seems like a decent alternative (assuming one is just as irrelevant as a factory worker) makes it seem like there's a massive misunderstanding going on. Being a mortal sworn to Chaos might give you more liberties.. but hardly to live life as you see fit... unless that is to live and die for the Chaos Gods. So why not live and die for an entity that doesn't eat your soul as a guarantee.. though the Warp might do that anyway.

Tau are doing rather well without using the warp. Not saying I would root for them. Theyre just as nefarious as everyone else but more liberal about their conquest.
