The transform doesn't work for me when adding the third appearence or trying to redo the transform in the second appearence.

How did you use Appearance tab? I keep getting only one text layer even though I added a layer..

First you need to make the charecter fill none, then back to Type appearance and add new fill.
Check 0:38
Actually in this tutorial we play with multiple fill with diffrent effects, not with layer.
