As a hobbyist who sometimes works with superglue and thus, sometimes gets said glue on my fingers, acetone nail polish remover, hot water and dish soap and give your fingers a good soak so help free your fingers... other glues, I'm not too sure
Additionally, some glues also work better with certain plastics than others. Like a Gundam might be ABS plastic and Tamiya quick set plastic cement comes with a brush and makes quick work of assembly. Best part, it won't stick your fingers together! If your Gundam comes on sprues like my models often do, you can test it for yourself by cutting a bit of spare sprue and trying to glue it to another section of unused space on the same sprue. It is how I test plastics to see how they will react when the box doesn't say what plastic were working with. The Tamiya plastic cement actually slightly melts the plastic that comes in contact with. The solution essentially melts and welds the plastic of the pieces to eachother.
