The best char kueh teow does not fry so much in the wok.
It should be fried one portion at a time so as to achieve the maximum flavour from the high heat wok.
Nowadays hawkers are taking a lot of shortcuts. Even prawns used are IQF (indivual quick frozen) treated with chemicals cos lazy to peel fresh prawns.
The correct ingredients are fresh prawns, fresh blood cockles, chinese sausage, fish cake, bean sprouts, kuchai (garlic chives).
