For the folks who are concerned with the oily part of the cooking (as I do also), I'd suggest to transfer the fried eggplant directly from the frying pan onto a paper towel and let the paper towel absorb some of the grease. Better yet, for some who may have health concerns with frying oil, I'd further suggest using extra virgin olive oil for frying. It's been noted that EVOO is a healthier alternative to corn oil, vegetable oil, lard, or canola oil.

Paper towel does absorb the oil and eggplants have a tendency to absorb so much oil when fried and it is hard to get around it. I have learned a lot and willing to learn more. Thanks.

"Adobo" in the Philippines is a manner of cooking (using the same ingredients) and it can be meat or vegetables. "Talong" is eggplant in English. Hence, Adobong Talong. However, Chinese stir fry is somewhat similar but I believe they use more ingredients than the regular adobo (garlic, black pepper, bay leaf, soy and vinegar). it would taste slightly different but they are both good ways to cook eggplant.

Never tried adobong talong. Looks delish so I will try this recipe but less vinegar might not even fry the talong to minimize the use of oil. 😊
