Fermentation is controlled rot. The majority of Brewing and Distillation is cleaning. Living in the north we have to deal with things like shit freezing and humidity. The extreme heat of Texas has it's own super fun and interesting quirks I'm sure. We found a farmer who would pull his truck up to the auger and use the spent grains for pig slop saving us the hassle of storage and disposal and all the pests associated with that.
I have literally lived 15 minutes away for years and I STILL need to get over there! Thanks for the background look!

Yeah so many of us have taken Sommelier classes. As a brewer and a Cicerone all of that is BS for anyone not devoting their life to the presentation of the product. Even your above average seasoned drinker can get a palate that could rival any Sommelier/Cicerone. It's about whether or not you want to go the extra step and present it with airs. That's my take as a producer anyway.
@@biggrocc19first of all no need to get fiesty. Whisky somms are not generally snobs as a rule. Rather they shepherd others in their experiences with whisky. Their job isn't to tell you you're wrong for liking something or to invalidate others' experiences. The tasting/sensory part is half the story and is a tool not the end goal
What do you guys do with your spent grains? There are a lot of options and some profitable.

What do you think about Whiskey production over capacity? The producers are saying sales have slowed, now they're wholesaling barrels cheaper.
For yeast check out Community cutters yeast lab. They are in San Antonio so they could be transported in a car with a/c to keep the viability up.
re: the power outage, the amount of land the distillery is on, wouldn't it be probably pertinent to have a few large ground mount solar arrays and battery backups. even if not for keeping the offices running, but just the distillery, or the other way around
Heck, even an emergency generator would be a very good idea. Especially considering the sorry state that the Texas powergrid is in in general.
I mean, that Ice storm a couple of years ago really shouldn't have taken out power for that many, nor for so long, as it did.
Depends on how they heat the stills and brew pots. If they used electricity, that’s a ton of power.
@@UncleCharlie2.0 oh for sure, but even having enough power to have a safe shutdown procedure and slowly ramp down the temps, instead of losing power and it just tanks(excuse the wording) the temp potentially ruining the batch

some python code could fix the issue of having to watch the power and keep the temperature right. Two or three hours of coding a few hours of research into how the hardware works to send the right signal could make your process less error pron and give your staff the time to work on other things that computer and automation can't solve.
From brewing beer, sometimes its better to keep it simple stuipid, less things to fail. And things will fail at the least opportune time.
If Kyle wouldn't mind us seeing inside his personal life id love a video on his old job making space ships. We couldn't stay there and listen to his mom talk about how proud she was of him for too long during bastard's ball cause there was whiskey to be had.
