You can really eat, Mike. Don’t worry a/ us indonesians cursing you for eating however you want. If the place prep the condiments, fritters and whatever side dishes, you can eat it w/ the main dish. It’s just some of us don’t like certain thing in our soup like potato but that soto got different versions and each chicken version come w/ a potato of some sort be it chips or fritters. I admire you to eat adventurously.

Indonesia fact : Indonesians usually refer sweet soy sauce as just "soy sauce (kecap)", while the regular soy sauce (the one the japanese and chinese regularly uses) as "salted soy sauce (kecap asin)".
Yes , because i believe sweet soy sauce is originally , invented in Indonesia. Chinese immigrants realized that particular part of Javanese has sweet tooth , so they collabed with locals and made a new soy sauce added with palm sugar. Not sure who has the idea first , but i think it's in Raffles' book about Java around 18th century.
If you dont have time to travel around Indonesia, you can try all the food across Indonesia in Jakarta. There is a lot of authentic Indonesia food here in Jakarta.

Dear Mike, "Sambal Sauce" is a bit of a pleonasm. Sambal itself already has a meaning (sort of) as sauce. (A) Sambal is any mixture (condiment) with (red) pepper. This red pepper has a strange history by itself. The Dutch brought it from Surinam (South America) to Indonesia, and specially to the isle of Lombok. From there it made a tour around the world in many varieties. Long story. Take care, Lombok Rawit is a spicy pepper. But it is childsplay compared to the Surinam Ajoema pepper. Bon appetite!
I always curious for the history of chilli that changes Indonesia cuisine alot, not so many history recorded about it, but I will say maybe Portuguese and Spanish were the first to introduce the chilli to Indonesia especially eastern Indonesia and the Dutch spread it and popularized it even more..

Mike had a very good guide in this video. Those are all top places where locals go to. All offer great value for money and are establishments that have stood the test of time for taste and value. Most of the food will be a little sweet, but it's just like how the locals like it. A bit tired of some other foodie TH-camrs who just go to their friends' places or random places around the tourist area. Highly recommend these places. My personal favorites are the first bakmi place and wiro sableng seafood.

You are right. Indonesian Chinese noodles are probably the best noodles in the world for me and I have travelled everywhere. It's more chewy and al dente and you can make it spicy.
