    David i was thinking that you could create the ultimate "insert a dish here" and do it by taking the best parts of the recipes that youve tested already. For instance, for crab rolls, you would take the best parts out of the recipes youve tested before and combine them to make the "ultimate" crab roll

    I found while making cheesesteaks if you just add a sprinkle of MSG it boosts the flavor from 11 to 100. Its kind of insane

    Ill eat damn near anything that calls itself a Philly Cheesesteak but I definitely prefer it with that bright yellow, toxic hazard symbol melted cheese reminiscent of nacho cheese spread. So freaking good.

    Unpopular opinion: a chopped cheese is just a hamburger made by someone who failed to keep the patty intact when flipping it and decided to pretend it was intentional.

      Considering it's Bodega origins it's more likely an Americanized version of a related sandwich only history forgot which one. It has similarities to an Arabic dish and might have a similar history to how kebab became the American gyro and Mexican tacos al pastor.

    You’re right about there being a weird vibe across the Internet. I think it’s stress from personal lives filtering into online. Food, gas, and housing prices are at record highs, inflation hasn’t been this bad in decades, and wages have been stagnating for a long time.
    I think people are just feeling scared and nervous about what’s going on.

    To answer your question David. Yes, every sphere of TH-cam creators feels like you. The history and education sphere especially is worried/uneasy. Lot of us has seen a 50-60% reduction in views.

    maybe someone said this in the prior 302 comments, but i found the best way to manage frozen steak is to cut it with a mandolin. (don't chop your thumb tho!) i always use a roast of beef and just chop off what i need for however many cheesesteaks i need at the time. thanks, i love your videos!! greets from canada. PS in a bind with no cheese wiz, i use mexican queso which does the job and adds a bit of salsa flavour into the mix!

    well to be fair, it's more than just a sum of it's parts. if you think about it, as an example, essentially bread universally is just flour, water, yeast, oil, sugar, etc. and yet every pizza place and bakery has completely unique flavors, textures, and what not. what makes their philly cheesesteak so good is the process that goes into transforming a few simple ingredients into a gem

    I think that the main reason Philly cheesesteaks are better is just that the quality of the meat and bread is so much higher inherently. I've lived in both Philly and New York and while I love both sandwiches, the Philly cheese steak is just better

He quickly made his way into my top 3 with Kenji and Chef John, beating out Adam Ragusea, Babish, Joshua Weissman, Ethan Chlebowski and Sam the Cooking Guy. I enjoy them all, but that's my opinion.

    I used to be adamant that white cheese/provolone was the proper cheese for a Philly, in large part because I despise Cheez Wiz, but then I tried using Velveeta Shells and Cheese sauce on my Philly and now I say that liquid yellow cheese is definitely the superior cheese.

    Canadian here, I’ve never heard of a chopped cheese sandwich and don’t really understand it. I did watch your video on it when it came out thinking it was some cool new sandwich but really it’s just a chopped up burger 🤷🏻‍♀️. The Philly cheesesteak sandwich I have heard of and we do have in Canada and it’s delicious!

      American Cheese has enough of it already, so there's no need to add more than that. Without American Cheese, you would need sodium citrate tho

    I don't wanna be a annoying philly person but i've only ever been bothered by chopped cheese comparisons because content chefs will go to a restaurant for a cheesesteak but a bodega for a chopped cheese and it's like of course that tastes better!!     For Cheeze Whiz you don't even need corn starch, just add more cheese. All chemicals in cheese slices already make the cheese melt properly.

    You need to come to Chicago and learn about the BEST beef sandwich ever. Chicago's own Italian beef. And don't go to a tourist spot like Portillo's. Go to Johnnie's in Elmwood Park.

      I lived in both Philly and Chicago (Lincoln Park). The Italian Beef is a tasty sandwich, but FAR from the best beef sandwich ever. Its a glorified hot roast beef sandwich and is nothing close to Philly Cheesesteak.

    Those electric bug rackets are awesome and worth every penny (although affordable). Thanks for the yummy video. Now I will be going out and getting a cheesesteak... You have been very clear about your hatred of cream cheese over the years, so have you tried making Italian cheesecake with ricotta? I've never had it but saw them before and was curious if they were any good. I know there are a few videos out there for them including your nemesis of the non-chef that shall not be named. Although it seems there are plenty of others that you could use and avoid trying her recipe like Vincenzo's Plate, Giada De Laurentiis, Martha Stewart and Ina Garten.

    I needed this video today! I will also confess that I’m insanely jealous of your grocery store bakeries. Hoagie rolls are just not available as a standard item here in Minnesota so I’ve been trying to find a recipe, but I just don’t know what I should be looking for. Should I be trying to make Joshua’s?
    Help! And I mean that honestly. I have no qualms about baking bread. I just haven’t found a recipe that is sturdy enough to hold the contents of the sandwich without falling apart.
    Also, I’m off to Amazon to get that fly swatter along with a decent spatula like yours.

    Concerning the gloomy mood on the internet, I'm not very surprised. With the Supreme Court decisions, there's a huge weight on everyone's shoulders that wasn't there before, and considering they outright said they were coming for gay marriage next... Things don't look great right now. Add that to the inflation woes and people struggling to afford things these days, people losing homes, the long-term effects of covid, the war in Ukraine... We're not having a very good year so far on a national and global scale. Much love to you David, videos like yours can be a great distraction from all the crap of daily life.

    How I would do it: (for 3 or 4) : 1-1&1/3lb NY strip;
    2& 1/2 Tbs butter
    1 clove thinly shaved garlic
    A large sweet onion (and no, it doesn't HAVE to be a Vidalia);
    2 thinly sliced green bell peppers
    1 thinly sliced red, yellow or orange bell pepper, thinly sliced; AND a thinly sliced hot pickled cherry pepper (unstuff and spread the stuffing on the bread on top of the oil and vinegar);
    Black pepper
    A scant Tbs Worcestershire sauce
    9 oz of Monterey jack, or havarti, provolone, muenster, or American cheese.
    Good fresh hoagie rolls or slabs of Italian bread.
    A spritz of Italian dressing or olive oil and vinegar in the roll.
    (You said it. Maybe the regulars are on vacation.) 🤷

    Chopped cheese: Step 1 - But some cheap ass ground beef
    Of course the philly wins that battle, but for the taste/money chopped cheese wins hands down.

    Philly girl here. I am so invested. You're missing the salt-pepper-ketchup (said as one word) in Philly. We DO NOT use cheese whiz! White American cheese is traditional

    The chopped cheese is a hood food. No one knew about that sandwich until Becky from insider food decide to Christopher Columbus made her way uptown about 6 years ago. The Chopped cheese is not an answer to the philly cheese steak, it has exist far longer then any of ya'll have known. I've known about the chopped cheese for at least 20 years.

      Ya that's the thing. I don't mind if a creator has ads/sponsors. They have to make money somehow. But gambling apps or apps that prey on people with gambling addictions? That made me feel some type of way and I'm surprised no one else in the comments has said anything

    there is no 'debate' over which is the original. cheesesteaks were invented in 1930... cheese whiz... wasn't invented until 1953. so obviously cheese whiz wasn't the 'original' cheese on a cheese steak if it was invented 23 years after the invention of the sandwich. lol

    I think the reason for the bad vibes and general downness of viewers is probably TH-cams forcing more and more and more commercials on people. Sometimes I’ll be watching a 12-15 minute video and TH-cam will interrupt it 4 or 5 times. It’s the placement of these interruptions. Sometimes in mid syllable. I know commercials pay the bills but the way they handle it is terrible and just getting worse and worse. Just my thoughts.
    You videos are fantastic btw. Always fun and insightful.

      and nah, Kenji's isn't a Philly cheeseteak, that's either a chopped cheese given the technique or a steak sandwich with cheese (not the same).

    Eh, it's a matter of preference. The people's bias is mostly because of which one's the first one they got exposed to.
