OMG, this reminds me of my grandfather so much. I remember him making perch, rainbow trout, and big mouth bass. He would make breakfast skillets and fry the perch (or whatever) so hard that the bones were practically edible. Good ole southern cooking-a fisherman/hunters feast. Yes! LOL

Hi, Great Cooking Video! I also like to cook Brook Trout in the morning whenever I can. I was surprised that you left the gills on the fish when you clean them. I know you will not eat the gills but after you slice under the the fish, instead of removing the entrails, cut the bottom jaw tab off the lip and grab it and pull it down and this will remove the gills and the entrails. Then remove the vein and clean. Thanks again!

Just a little tip from Western North Carolina...After you make that shallow cut from the butt up to the gills, insert the knife between the lower jaw and the tongue on both sides, then place your thumb on the tongue with the trouts mouth closed and pull down towards the butt. Everything will come out slick as a whistle and all you have to do is clean the blood line up the spine. Been catching this beautiful fish since I was 6 yrs old. And after 42 yrs they still taste Guuuuuud!!!!!!

Ooh Ya Baby, fish fer breakfast. Something I do with the stuffing is use mayonnaise instead of butter. In a bowl I mix it with whatever Im gonna use to stuff, and then spoon my stuffing concoction into the body cavity. Just gives it a nice flavor. Great show guys.
ok, you made a believer out of me this time. the best teflon non-stick cooking surface won't stop a poorly cooked fish from going to pieces if you try turning it over. heat has to be high enough to cook the fish but keep it from "welding" into the pan. good one.
There is absolutely nothing better than fresh caught fish off of the grill. Period. One of the best tasting meals I ever had, and will ever have, was when I last went camping. We caught some trout, cleaned them and wrapped them in some foil with the lemons that we brought with us, and put them over the fire. Damn!

The onions,scallions and garlic get rid of the fish smell. Soooooo Gooooood. and it is fresh.. Fresh fish does not stink.
