I wholeheartedly wish he put the hat back on one more time just for the finale like a kind of, "Outlaws Last Ride" moment, but I understand the symbolic reasons why he didn't - the divide between Walt and Heisenberg no longer existed because he was no longer a scared man hiding his fear by acting as an alter ego, so he no longer needed the hat and sunglasses to don that persona anymore because he was already fully consumed by it.

If you look at Walt's expression during that scene he looks as if he's trying to protect any bit of his fragile ego that's still left while also trying to hold on to that role of the protector, the head of the family. Aside from turning into Heisenberg I like to think the dark red shirt he reveals when he takes the light red shirt off is like a metaphor for the front he puts on
