@@AMindFullMom So i have a family loved recipe that uses washed and scrubbed red potatoes quartered and skins left on. Do you se any issues with skins being left on? Also, I use sour cream and a bit of heavy whipping cream.

It's one of the most delicious things I have ever eaten, but it can go awry. My greatest challenge with the recipe has been cooking the potatoes so they're fully cooked but not falling apart. Hi Kyle! You can add 2-3 whole garlic cloves while pressure cooking the potatoes. The garlic will soften and then blend into the potatoes when mashed. Alternatively, you can add garlic powder after cooking.

Yukon potatoes. Evenly cubed peeled potatoes. 1 cup cold water for 6 quart 3 quart IP or 1 1/2 cups cold water 8 quart instant pot and one tsp salt. Pressure cook for 10 minutes. Allow natural release for 5 minutes. Drain potatoes. Do not rinse. Add potatoes back. Turn on sauté for a minute. Turn off. Mash the potatoes with potato masher or fork. Add 1/2 cup warm milk and 3 TBS warm butter. Or non dairy milk. Microwave butter for one minute. Secret ingredient. Add Sour cream. Add salt to taste. How do we cook garlic to add it?
You have two options. You can opt to add whole garlic gloves to the cubed potatoes, for soft sweeter garlic, or simply stir in garlic powder with the milk.
I used chicken broth for my cooking liquid then drained it and added my own homemade roasted garlic butter. I used red potatoes with the skins on. I will never boil potatoes on the stove again. These turned out so creamy without milk.

My instinct would be to rinse the potatoes to get rid of extra starch after cooking. Instead can you soak the potatoes in water to get rid of the starch before adding to the instant pot to cook? I do that with fries before cooking in the air fryer.
I have stopped using the 'good old fashioned' hand masher and use a potato ricer instead. Not only are the results far superior, you end up with a more consistent result. Any additional ingredients can be mixed in easily with a wooden spoon.

Can you freeze the mashed potatoes that might be left over?
Absolutely! To freeze leftover mashed potatoes, allow them to cool and then place in a freezer-safe bag. Freeze for up to 2 months.

I hate to peel potatoes, so I cook them with skins on. Give them a quick dunk in ice water and the skins slip right off., but they still stay warm.
What is the easiest and safest way to drain the water off of the potatoes after they’re done pressure cooking?
I would simply put a strainer in the sink and remove the inner pot with pot holders and drain the way you would if cooking on the stove.

Never used milk in potatoes..always used single cream. Maybe half and half would be a healthier mix.
Cream is delicious as well though

Its a insta pot you dont have to cut into pcs
They absorb too much water if you cut up the potatoes
That is why I like to saute them a bit after they cook to remove excess water.
