Because kazuya is absolutely cracked in advantage. A top player doesn't choose a character because they are honest. They choose a character because of their personal affinity to that play style
I have no clue why Japanese players always leave after one game, but if I had to guess I'd say they feel it's more polite not to contest somebody's win. Like here in North America you get the "run it back" kinda salty mentality which might make people want to keep fighting the same opponent they lost to, but in Japan that might be more socially unacceptable so they don't want to seem like that.

Playing a set at the very least gives ppl the opportunity to start noticing and punishing patterns, which is really at the heart of competitive. It’s also why a lot of ppl don’t play more than one 🤷
