Are you sure you want to trim the canopy? Seems like in that much heat your tomatoes will do great with all that mesquite/palo verde protecting it. I would rather have slightly smaller tomatoes than burnt ones if that is the trade-off
I had to because that entire bed was 70% shaded February and March and if I didn't get the plants in the ground early enough I wouldn't have mature enough plants to give any fruit before the heat kicks in and they stop producing...around June normally. The structure over the planters can have shade cloth. I bought aluminet for it. It's shade cloth made out of very fine aluminum strands. it reflects a crazy amount of heat while letting 50% of the sun in.
