    I LOVE Cowboy Candy!! I use it on anything and everything. Cowboy candy can be used as a condiment or an appetizer. You can top your pizza, burgers, Brito bows, etc. To make an appetizer with cowboy candy, I open a jar and pour it over a brick of cream cheese and serve it with your favorite crackers!

    Becky, i had thought my canning and preserving days were behind me. My family is all gone, i live in a 1BR apt and don't have a garden or a big farm kitchen anymore. All of that and anxiety and maybe a bit of lonliness over the last few years have been tough. My love for cooking and being in an organized, prepared kitchen has come back since watching your videos. I am excited about something. My kitchen is my happy place. I've canned and dehydrated everything i can get my hands on and am sharing those things, too. I live 2 blocks from a beautiful farmers market and am in love with these projects. Thank you for reminding me of being a young wife, gardener, and canner. I'm doing as much of that as i can again. This is on the agenda for next weekend!

    I canned 195 pints of Cowboy Candy this year, I also canned all left over syrup.... we planted 140 pepper plants, 220 tomato plants of different varieties.. plus all other garden veggies... we do not sell but can, freeze, dehydrate our produce and give away to family, friends and neighbors...

    LOVE this... I modified it a bit & cut sugar in half, added 2 finely chopped Habaneros, 1 small, finely chopped red onion & about 8 finely chopped garlic cloves. **BOMB!!!

    I wonder if you know how calming and soothing your videos are? If you know that your sweet personality and warm nature are among many reasons people watch. I have a similar size property and plan to (somewhat) homestead in the coming years which is how I found your channel - researching for my hopeful future but I also suffer debilitating anxiety. My husband works nights which only increases my anxiety levels and nothing calms me like your videos so I’d just like to say thank you for sharing your life and passion and for offering a safe place for people like me to feel not so alone.     I want to be like you when I grow up! Since I am 50, I might get to that point yet. 🤣 Your peppers are hot this year, because of the lack of rain. The capsaicin is what causes the heat, and if you dont get a ton of rain, it becomes more condensed and intense, equaling hotter peppers. More water will dilute the capsaicin. Of course some varieties are just hotter than others. You inspire me!!!

    My brother and his wife were getting about 20 eggs per day so we were eating a lot of deviled eggs. The Candy started as a topper, one ring per egg. Then it got minced into the mixture to finally minced, a little juice and a ring topper. It did make for some fantastic deviled eggs.

    I just finished my second canner of the morning with cowboy candy. I had about 7 pounds of jalapeños from the garden. This is the first year I’ve done it and we really like it! I do add turmeric, celery seed, salt and garlic. I also canned my leftover syrup for a meat marinade/glaze. This is my second batch this year. I made cheddar jalapeño bread with some from my first batch and it was really good!

    I love this recipe. I did a blend of about 65% Jalapenos and 35% Bell Peppers to tone down the heat to suit my family. It was so good. Thanks.

    I made these the other day. I tried something new with the extra liquid that turned out fantastic. I boiled the jalapeno syrup along with 2 cubes of butter until about the hard ball stage. I was aiming for taffy but went too far. Anyhow, when it cooled off a bit I pulled it like taffy until my arms couldn't take it any longer, then I cut it into small pieces. I tossed the pieces in powdered sugar to keep them ftom sticking to each other. I'm telling you, it is really delicious. If you like candy...hot candy, give it a try. EDIT: I also had a red bell pepper I had to use, so I chopped into approx 1/4 x 1/4" pieces & added it to the jalapenos. It didn't add anything flavor-wise, but it made it a beautiful red & green concoction perfect for Christmas.

    I canned 20 x 1/2 pints a few weeks ago and I’ve already gone through 5 of them. 😂
    I love mixing it into cornbread, and I used half a pint in my homemade barbeque sauce!

    You are so in your happy place canning and your face glows! I buy different varieties of beans by the cases because I love canning huge amounts of beans for the pantry. One because we eat lots of bean soups, chilies, rice and beans everything beans and it is my addiction canning them. Thanks for sharing your joy!!

    When I saw the notification for this recipe, I literally said "YAAAAYYYYYYYY" super LOUD in my apartment! 😂😂😂
    Thank you so much for this recipe! It's something I want to try out and, for some reason, I always had the impression it was pretty complicated. However, you make it look so so easy and simple to make. To the point of removing any intimidating part away. That's an awesome gift/skill you've got there! 👍😉 I hope I'll be able to make this recipe soon! I love cream cheese, so I might try Cowboy Candy with it, too! 😉
    Edit: Just letting you know that you forgot to write, the word "jalapeños" in the ingredient list (you only wrote " 3 pounds, thinly spiced") and, in the recipe's directions, at which step to add the salt. I know it has to be added when it's boiling because if it's added before that, it erodes the bottom of the stock pot (or whatever pot we use). So, in my own notes, I added it at step #2, before adding the peppers.
    My goodness, this recipe looks so easy to make!!!, 😄😄😄🎉🎉🎉😄😄😄

    Im going to have to try this someday. Great video, Becky. BTW, overwatering peppers can make them less spicy. If you want spicier jalapenos, give them full sun, yank off some leaves, and deny them water every so often.

      Ok Becky, turns out I bought habaneros 🤦‍♀️ so I made the spiciest cowgirl candy that you’ve ever seen. I was sweating and sneezing when I made it. One of my friends loved it but this weekend I bought jalapeños at the farmers market because I didn’t grow enough hot peppers this year to try this again! 😂

    Using your recipe I canned a batch of this last fall. I’m not a hot spicey food person but my husband is and he loved it! This last weekend our family was together for dinner and I made tacos etc. I put a jar of the jalapeños out. My son added them to his taco and said, “wow! mom these are hot! Delicious but because of the name the heat surprised me.”lol. He also commented with a wink, “what a great gift several jars of these would be.”
    I just smiled and thought a comment like that would make you happy knowing how much you enjoy showing love and making others happy with the food you make. Thank you for sharing with us!! 🌶 And yes, I’ll be making several batches next year!

      It is the seeds that make it very spicy. Slice the peppers length wise and scrape out the seeds. Wear gloves too.

    This is the greatest Recipe I have ever found... I can not get enough of these, I too eat them on everything.
    I did the original 3lb recipe and loved it so much that I went through those few jars immediately. I then went out and bought 12 more lbs of Japanenos to make a second batch...

    I have a canner I’ve never used. It’s been sitting around for several years and I’ve always been intimated to use it. You make it always look so easy and I’m getting closer and closer to trying it out. That cowboy candy recipe looks delicious also.

    Hi Becky and friends. I started buying Cowboy Candy at farmers markets about 20 years ago. Started buying by the cases so that I could gift it to family or office and church friends! Everyone loves it!That gets expensive!! Now I make a version that is called Cowgirl Candy. Instead of slicing peppers I dice them along with a large red onion and a few red peppers. Makes a prettier presentation for Christmas gift giving. I also do not change the amounts of ingredients for brine and will have enough brine left over still to can a couple of jars for marinating chick or pork before grilling. I do add the spices because that was the first recipe that I found. Happy Canning!!!

    I made a ground cherry and jalapeño jam that I pour over cream cheese too. It's AMAZING! I used a low sugar pectin since the ground cherries are already so sweet.

    Love this stuff, I make it often. Did you know that the name “Cowboy Candy” is trademarked related to any candied jalapeno? I have a cottage foods business, got tagged by the trademark owner and requested I take the ads down or change the name - so now, I make/sell “Candied Jalapenos, Cowboy Style”. 🤷‍♀️

    My husband's uncle used to make stuffed jalapenos with sauerkraut and a hot sweet brine . I never tried that but it was so good . Your recipe looks so good. Thanks again for the video .

    I make extra syrup, boil with peppers and then can it alongside the jalapeños. It’s the perfect sweet-hot on pork roasts and mix with mustard when baking a ham. I also throw carrots into the jars and they’re delicious

    I bake my own no-knead bread and I dice up cowboy candy and add it to the dough before allowing it to rise. Very delicious, especially when sliced and topped with brie cheese.

    You should pickle the jalapeños in vinegar With some onions and carrots! It’s so good! My mom buys the canned ones from the store! But I bet the fresh ones would taste better!!

    I also made candied jalapeños and canned them. I love them on anything that uses red sauces. Yummy.💚

    I added garlic so good and spicy, I save & canned the brine too . I'll be making serranos cowboy candy tomorrow. Your hotdauce but green & you sriracha sauce too got lots of chillies from my back yard thank you so much.

    A couple other tricks , wash jars well, place in a preheated oven 230 degrees. Sanitation takes place at 212 so at 230 for 20 minutes does a great job sanitizing without the hassle of boiling and the oven will keep them hot for packing.
    Also if you don’t want to store your lids somewhere else just loosen them well , leave them resting on the jar in storage. Thanks for your video, hope this old lady helped make your next batch easier.

    I just used your recipe to make 24lbs worth of cowboy candy. We also canned the leftover brine and used some to beef up a brine that we are soaking our salmon in before we smoke it. I can't wait to taste everything!

    I love to use both red and green jalapenos in mine. I can them in jelly jars because that is about the perfect amount to serve poured over cream cheese. And the colored peppers make the jars look so festive for Christmas. For friends and family, we don't do individual gifts any longer. We do family basket gifts. So I'll put jar of cowboy candy, block of cream cheese, box of crackers, maybe a jar of homemade jelly, , box of homemade Russian tea mix, box of popcorn and a family movie.

    We love this over a block of cream cheese too! Only difference is we add gelatin so it’s like a jelly! I love the thought of using the juice though for spicy margaritas!

    Hello..I just made my first batch of cowboy candy..omg that is so good..my jalapenos were super hot but good..I had to alter the recipe a little ..I put in 3 cups of sugar and ran out so I put 1 cup of brown sugar..really good..thank you for all you do you inspire me..your energy is amazing

    oh my gosh Becky! its only been a slightly over one year and you are in a new homestead! I was looking through videos to make cowboy candy for friends. thanks for all that you do. also LOVE your new kitchen!! this old one was dark. love the light in the new one and SPACE for all your cooking and canning.

    The recipe I follow uses white sugar and brown sugar with apple cider vinegar and I do use the turmeric, I like the yellow color it gives 🤣 I like cowboy candy but I love giving it away to my family and friends more!

    My aunt grows Jalapenos. She says the more water the plants get the more mild the jalapenos are, the less water they get the hotter the jalapenos are. I will have to hit her up for some jalapenos, the cowgirl candy looks yummy!
