As for the coke and salt one. There's a bit of missing information here. It's not normal salt it's rock salt specifically that's used. The reason for the effect is nucleation, rock salt has a larger and more jagged surface area for increased nucleation points. This is discussed in more detail in Mythbusters episode 57: Diet Coke and Mentos.

I don't know if anyone else has commented this, but the second one happens because salt is acting like mentos to a smaller degree. Mentor gets the reaction with coke and other sodas because of the texture of the mentos. It's got a rough texture so the the carbonation likes to go to it and gets lodged in the mentos and that rapid movement of the carbonation is what causes the reaction. The same thing is happening with the salt in number 2 but to a smaller degree as salt is smoother and has a lot less surface area. If you want to recreate the same effect overall you want a lot of salt for it.
