On a whim, I visited Niigata and finally made it to the long-awaited soba restaurant. This soba place was featured on "Teramoto Jimon's Uzachannel," and it's called "Miyano-ya at Mt. Hakkaisan." The lineup of wild vegetables, fried rainbow trout, sobagaki, and soba created a supreme dining experience, making for an exquisite time.

For over a century, Miyano-ya has been serving visitors at the base of the sacred Mt. Hakkaisan. It began by selling candles offered to the mountain, and for four generations, the family has served the mountain, making soba their family business.
