Foraging and Cooking Katniss Plants / Wapato / Rat Potatoes

What I've learned over the past 8 years since I harvested my first wapato: harvest the tubers in Oct, it doesn't matter if the plants are visible. Find the plants, dig a roughly 1 ft x 1 ft hole, then hollow out the hole. The layer of mud the tubers are located in is generally about 8 inches below the surface. I've watched Sam Thayer pull 20-30 tubers from a single hole.
After the harvesting demonstration I go over a few simple ways to cook them. Simmering with pulled bison or venison, or adding to soup is probably my favorite. Lots more in the post linked above.

Yes the plant is where she gets her name and MO. Saggitaria latifolia, referring to the archer. Katniss is just one of the common name.

The skin is so thin I've found they can be peeled simply by scrubbing them with an abrasive pad. I think this results in less waste than cutting off the skin.

It’s also a lot more work. At the reservation we peeled them with a knife.

Katniss Everdeen. They're referring to katniss here, which is one of the common names for Saggitaria latifolia, coming from Saggitarius, the archer. It is referring to arrows and archery, to be certain.
