Definitely not all! It mostly comes down to the illustrator's preferred media in most cases, I'd say. I know of artists making really beautiful illustrations in gouache, watercolor, ink, and so on. I've even started doing more with colored pencil and ink myself lately just because I think it's good practice to do lots of different things with art anyway. Digital is a lot more flexible (in my opinion, and in how I use it), but not the only way to go!
