    Thank you for sharing! I have always wanted to try Panettone but haven't done it yet. 🙂
    As for making sourdough bread in winter, I used to fight it too. I thought just by waiting longer it would eventually work, but it didn't work because the dough relaxed too much, and there were many adjustments needed in terms of recipe and procedure, so I finally got a plant heating mat and it has worked nicely. You could also use a simple light bulb (20W or less). Happy baking!

      Thank you very much for your comment. It is difficult to keep 25 to 28c degree during 🥶 winter. I now used the little space above the tropical fish tank for bulk proofing the sourdough, although it only reaches at highest 20c. I guess in order to bake good sourdough panettone, it will need some machine to warm it up.

      I was given mature sourdough starter from the natural bakery in France. I’m following the instagram called Pain Vivant in North France and I was lucky to visit the bakery in January. I will make more video using that sourdough starter to compare my own sourdough starter.
