Bottle gourd (also known as *lauki* or *sorakaya**) and **dal khichdi* without rice can make for a nutritious and light meal, suitable for those looking for a low-carb or gluten-free option. Below is a recipe for **Bottle Gourd and Dal Khichdi (without rice)**:
Ingredients:
*For the Khichdi:*
1 cup yellow moong dal (split yellow lentils)
2 cups bottle gourd (lauki), peeled and diced
1 medium-sized onion, finely chopped (optional)
1-2 green chilies, chopped (optional)
1 tsp ginger, grated
1/2 tsp turmeric powder
1/2 tsp mustard seeds (optional)
1-2 tbsp ghee or oil
Salt to taste
Fresh coriander leaves for garnish
*Spices:*
1 tsp cumin powder
salt as per taste
Instructions:
1. *Prepare the Bottle Gourd:*
Peel the bottle gourd, remove the seeds (if large), and cut it into small cubes. Set aside.
2. *Cook the Moong Dal:*
Wash the moong dal and toor dal thoroughly. In a pressure cooker or a large pot, add the dal with enough water chopped bottle gourd, chopped onion, chopped tomato (about 3 cups for a softer consistency).
Cook for 2-3 whistles in a pressure cooker or simmer for about 20-25 minutes until the dal is soft and fully cooked.
3. *Sauté Spices:*
In a separate pan, heat ghee or coconut oil over medium heat. Add the and mustard seeds (if using).
Once they begin to splutter, add the asafoetida (hing), garlic, green chilies, and chopped onion , chopped tomato, green and red chilli, curry leaves,palak, green peas Sauté until the vegetables become soft and translucent.
4. *Cook the Bottle Gourd:*
Add to the dal mixture by turmeric, cumin powder, and salt. Mix everything well.
Cover and cook for about 5-7 minutes, until the bottle gourd starts to soften.
5. *Combine the Dal and Bottle Gourd:*
Add the cooked moong dal to the pan with the bottle gourd mixture. Stir to combine well.
Add additional water if you want a thinner consistency, and adjust the salt and spices as needed.
Simmer for about 10-15 minutes until the flavors meld and the bottle gourd is fully cooked.
6. *Finish and Garnish:*
Once the bottle gourd is tender and the dal has absorbed the flavors, remove from heat.
Garnish with fresh coriander leaves.
7. *Serve:*
Serve the bottle gourd and dal khichdi hot, ideally with a side of yogurt or pickle for extra flavor.
Notes:
This dish is naturally light and healthy, and can be customized with other vegetables like carrots, peas, or spinach.
For a vegan option, simply use oil instead of ghee.
If you're looking for more flavor, you can add a squeeze of lemon juice just before serving.
