92 Masgouf, Iraq National Dish

    Masgouf from Iraq.
    Ingredients.
    1 kg whole carps or any white fish
    2 tsp kosher salt (divided)
    2 tsp curry (divided)
    2 onions (divided)
    3 cloves of garlic crushed
    2 tomatoes (divided)
    1 ½ cup chopped parsley
    140 mll tomato paste
    2 Tbsp white vinegar
    2 Tbsp lemon juice
    ½ cup water
    ½ tsp cayenne pepper
    clean, descale, butterfly and debone the fish.
    sprinkle the meat side with 1 tsp of salt and 1 tsp of curry. Set aside.
    in a frying pan add 3 Tbsp of oil, 1 chopped onion and 3 crushed garlic cloves. Sauté over medium heat for 5 minutes or until golden brown.
    add 1 chopped tomato, 1 ½ cups chopped parsley, 140 mll tomato paste, 2 Tbsp whit vinegar, 2 Tbsp lemon juice, ½ cup water, ½ tsp cayenne pepper, 1 tsp curry and 1 tsp salt. Mix well. And simmer for 5 minutes.
    transfer the fish to a BBQ basket that can close and hold the fish steady with the meat side up. Smother the fish in the sauce that we made and then cover with slices of onion and tomato. Close the basket.
    cook over hot coals first skin side down for 10 mins a side.
