I'm confused about something, being new to concrete. So I understand that mortar is just concrete with sand only, but no rocks. And I hear that you cannot bond concrete to concrete. Yet, I understand that concrete blocks or bricks are bond together with mortar? So it tells me there must be some way to bond concrete to concrete? I am curious, for the sake of building sculptures... say if I did not finish working in time? or want to add something? What would I do? (I listened to your advice about close adhering sheet plastic to cure work/ which slows drying & bought thin mil plastic to achieve that), so if concrete is not cured, covered, wet, how long can you keep it going where you add more concrete?
Rinse the bucket out and wipe it down with a sponge. Then let it sit overnight. The sediment will all be on the bottom and the water on top is clear and can be poured or siphoned off. This minimizes how much actual material you need to get rid of.
A straight pull mold should drop right out if you used a suitable release agent in the mold. For more intricate pieces you would need some sort of split flange mold.

How do you colour the concrete no iron oxide?
Good job! Couldn’t you spread youur waste as a thin layer over a plastic sheet and smash it when cured to little bits and use it for aggregate?
