If you don’t know why they put the meat in the pineapple: as you can see they tried to cut it at first and it was hard. The pineapple has some acid in it that works as a tenderizer, and if your scared to eat pineapple now, I’ll be glad to tell you that once you swallow it your stomach acid is more powerful and will disintegrate it.

tenderizing the meat was my thought as well. Though I don't think only doing that for 10 min or so would have much effect. I've seen similar idea where you soaked the meat in pineapple juice. That gives it a lot more contact with the actual enzymes or whatever they are called.
