- We bought an unusual vegetable at the Philippine market. It's ampalaya. I like ampalaya and my husband don't because it's bitter, but the vendors said this ampalaya is not bitter. It's very long and looks like a boa constrictor. We tried it raw and then stewed with shrimp. It's really good and not bitter at all. This is the kind of ampalaya Boris likes. It reminds him of boiled cabbage, but more watery, juicy. It's so good, it's delicious. Especially with shrimp. I cook them so good in butter, they're so juicy. Now we're in vegetable season and tomatoes are cheaper. Boris decided to pickle them. He cut them up, ground them up and canned them. It's hard to find glass jars here, so he canned in small jars we had accumulated from jam. He doesn't know how long they can last because there is no cellar here, no room in the refrigerator for them. I found another hobby.I started painting. It's a paint-by-numbers painting. Each sector has to be painted a different color. It's more about perseverance and patience. It's like doing a jigsaw puzzle. My husband is really glad I found a hobby like this, but he's a bit frustrated that I stay up late at night. I listen to music,sing, and Boris can't get me away from it. He worries about my eyesight. We received a parcel from France It was sent by Galina. She sent us wonderful gifts: foie gras, liquor, yarn for knitting and her autographed book. It is called "LOVE, Komsomol and Winter. Ampalaya is a medicine indeed - in raw form. Like most medicinal foods such as garlic or ginger - the medicinal properties are destroyed when cooked - so I eat those kind of medicinal foods raw even though they are harsh tasting. My late pinay wife came up with an easy way to eat Ampalaya raw by juicing it and freezing into ice cubes, then you can easily dissolve 1 or 2 cubes in a shot of sweet fruit juice that can be quickly thrown down the throat.

It made me giggle when I saw Boris’ instant reaction when he put the bittermelon in his mouth! 😅 I don’t eat it either because it is too bitter for me. My late Mom loves cooking that and even makes it as an omelette!

the bitter melon is good for blood sugar especially for diabetics and for high blood pressure
Bitter melons are good in pinakbit and stir fry with shrimp bagoong garlic and onion- also good nutrient.

Darlene, Here’s a new receipt for you .After slicing the ampalaya soake it in water with salt for about 15-to 30 minutes then sauté it in oil , garlic onion,tomatoes then add salt and water. Let it cook covered then add peanut butter let it cook until done then serve .Enjoy !

I have seen and eaten that kind of ampalaya here in Camotes Island, Cebu. One time i visited the place and serve to us for our lunch. It tastes good not bitter like other ampalaya
It's much better for you to paint during the day to save electricity and you can see much better. It's a nice hobby but doing it during the day. Boris is right for your eyesight to let it rest during night if you are really loved painting. Take good care of your eyes while you are still young.

Soak the ampalaya in salt water for 10-15mins before cooking to remove or lessen the bitterness.
You are right Darlene that's the Foie Gras came from, we eat it as an apetizer during Christmas or New Year.

I hope you use more of the lical, small ampalaya. Not so bitter. Those GMO-Chinese vegetables are imported from China or smuggled. Cook local and help local people, not the smugglers.

The long one is hybrid....its hybrid with cucumber that's why its not bitter.....the real ampalaya has more nutrients...
The long one is called snake gourd and common in India, we make it with onion and coconut.
Cucumber talaga Yan neng,kinakain Yan Ng hilaw.
To lessen the local bitter gourd bitterness, before cooking, I soak it first for around 15 or so minutes in salt and water
That procedure will remove the nutrients.

I eat ampalaya salad. Slice it very thinly. And add some chopped ginger, onion, and tomatoes. Salt and a bit of sugar to balance the taste.
The long one is not ampalaya. We called it sikwa in the visayas.

It is another kind of patola actually, the way I see it from your video we have that here in HK shorter than the one you've got. That's is why you said it taste like patola.

Here we have the bitter one and call it fouka, and stir-fried with pork, meat, fish or even tofu stuffing and served with rice, it's downright delicious 😊

Hindi Yan family ng ampalaya / bitter melon.
isang variety Yan ng cucumber. Scrape mo ang balat.
Pansahog sa sabaw or SALAD Venigar , sugar & black pepper lang ang dressing.

It’s not chinese ampalaya or chinese bitter gourd. Please don’t put everything chinese. The chinese people dont even call it chinese bitter gourd. This gourd is called Snake Gourd.
What happen to your eyes, are you allergy to dander? Cat and dogs have those, dont let the in your house.
