To a large bowl, add olive oil, garlic, herbs, salt and pepper. Mix well. Add vegetables and toss to coat. Leave aside while your grill is heating up. 15 minutes marination is adequate.
Thread vegetables onto skewers, alternating colors. Place on heated grill and cook on medium heat until tender, turning the skewers every few minutes and brushing them with marinade collected in the bowl. My skewers cooked on an indoor grill took 15 minutes.
Set skewers on serving plate and squeeze lemon over them. This recipe makes about 10 skewers - 10 inch wood skewers
When marinating vegetables, adjust salt and pepper to your taste.
