The main thing about the handle on a kitchen knife is most don't have a solid grip, and they don't have a hilt. That means the blade of the knife is more likely to break off, or if you're stabbing, your grip could potentially slip down the handle and you could cut yourself on the blade. Folding/pocket knives can have similar issues, so I'd personally put them into B tier on average. A full tang dagger though I'd put into A tier easy, maybe even low S tier.
