I have made mug cake mixing a box of angel food cake and a box of whatever cake mix I like. Keep it in a container and whenever you want you put 3 tablespoons of the mix with 2 tablespoons of water and mix it up and microwave for 1 minute. It is called 3-2-1 mug cake. My husband would love the lemon cake and I am excited to try the pizza. Sharing this with my grown daughter who also watches Brooke. TY for all you do.

Usually, we just went out for pizza or had it delivered but that weekend we were short on cash. Anyway, the "crust" turned out so gooey, we couldn't even pick it up. But we were teenage boys. We were starving. So we ate it out of cups, using spoons. The rest of us teased the "chef" relentlessly for years afterwards about his Pizza in a cup recipe. Who knew that years later it would be a real thing? Thanks for the trip down memory lane, Brooke. It brought a much needed smile to my face.

Many years ago, I made mug recipe crafts, it had the ingredients, minus liquids, and a recipe card, and I put different ones in assorted mugs and sold them at our town craft fair and apple butter stir off! It was fun to make and every one of them sold! People saw me later and told me they loved them and how good they were! I never did the one with the lemon, gotta try that, lemon is my favorite flavor! I think its important to note Brooke's microwave is 700 watts. If yours is higher watts then decrease the time!!! Example: my microwave is 1100watts I will start with half the mentioned time.

I have Celiac Disease and have to eat gluten free, and just thought I'd try to offer help... idk how well almond flour would work, but King Arthur has some flour that's amazing and gluten free! Any time I've used almond, whatever I'm making winds up really gritty. With King Arthur, it tastes exactly like regular flour, with the same great texture as regular flour!
I am with Lucy Shea, buy the one to one gluten free flour replacement instead of trying to only use almond flour. I have made my own gluten free baking mixes with tapioca, rice flour, almond and coconut flour, and still prefer the one to one replacement from Kings. I do add a little extra baking powder. It even works in pancakes, waffles, and biscuits.
@donnawestbrook8992 yes! And the King Arthur flour is free from wheat, rye, barley, oats and I'm not sure what all other grains. So, it's the perfect substitute for me!
