Greek and a chef here 🙋🏼♀️ The Aegean bruschetta, the white “cheese” you were referring to was actually white Tarama! It’s cod roe/eggs whipped up with onion and garlic, breadcrumbs, olive oil and heaps of lemon…it’s insanely good. Also the kokkinisto, the Mexican you’re tasting is the cloves and cinnamon! Used a lot in both Greek and Mexican cooking. Loved this video, easily my favourite in this series. 🇬🇷 ❤
Aw true, I thought it might have been a fresh stracciatella or burrata, cause of the pairing with anchovies, but I haven't had much experience with Tarama the only time it looked pink in color but i'm guessing that was prob from using a red coloured roe maybe.

Speaking as a chef for over 25 years all round this world , it is just bloody cool seeing a normal guy that loves to eat giving an honest everyday review on some of the globes goto places for good eats... So much better than some of these fkn stuck up food critics around that claim to know all there is about flavours and combinations but never cooked a day in a working kitchen in their whole life... I would much rather Spanian's review of my restaurant, yea he is rough and ready, loud and obnoxious but that's part of the aussie charm and I for one love his opera songs when a meal is hitting that spot just right! its great!

This is the best video of yours I have seen. You can tell how much you feel at home in Greece. You may be Spanish aussie but there must definitely be Greek in you. I can recommend Kos Greece, old Kos town, many ruins and ampitheatre, roan house, first hospital in the world the Asklepieion, Zia up in the mountains, beautiful scenic vineyards, nearby islands Kalymos,, Leros, Rhodes and you can see & visit Turkey from the harbour too. Then I hope you will visit the UK. I would recommend Yorkshire you will love the friendly people and great food there.

You have enough life experience in most aspects of things common folk don't understand, and it's been a joy to see you flourish and continue to expand yourself as a man and a human. Everyone has opportunities to develop, but for most people in similar circumstances they fail to grab those chances, due to falling into the pits and traps of the lifestyle. You are the example of developing hobbies, interests and becoming a more intellectual being, giving you opportunities to excel above the rest and show others that "making it out" is very very attainable.

I’m Greek Spanian, love your videos and the evolution man ❤️✌️. But yeah the Greek bolognese is sweet and delicious, it’s the spices used and the tomato sauce that makes it. My mum makes a good one but my favourite dish growing up has always been pastitsio and I am so impressed that you know all these dishes. You are like a fellow Greek brother. I live in Melbourne and although I have always loved my mum’s pastitsio and I’ve eaten many from all the Greek mothers, the best one is at Vanilla in Oakleigh hands down!

Just a piece of advice, don’t do a hood episode in Thessaloniki if you ever go, the most dangerous place is actually dangerous (for the ones who know I’m referring to Dendropotamos)

Take it from a Greek, Santorini is the biggest tourist trap. There are so many other islands where you can get the same thing for a cheaper price. Personally, I’d recommend Milos, Paros, Naxos, Tinos, Skopelos, Rhodes, Limnos, Kythera, Kefalonia, Ithaki, and Zakynthos Other islands to avoid: Corfu, Mykonos and Ios
