Stuffed brinjal masala is a delightful dish where brinjals (also known as eggplants or aubergines) are slit and stuffed with a flavourful mixture of spices and cooked in a rich and aromatic coconut-based gravy. This dish is popular in Goa and is known as Bharilli Vaygi often enjoyed with rice , chapati or breads .
Enjoy your delicious stuffed brinjal masala! Adjust the spice levels according to your taste preferences.
Ingredients:
5 small brinjals (choose firm ones)
2 onions, 1roughly & 1finely chopped
1 tomato, finely chopped
½ grated coconut
Coconut oil(for authentic Goan flavour)
1 teaspoon fennel seeds
1 ½ tbspn coriander seeds
Small piece mace
1 inch cinnamon stick
1 star anise
7-8 cloves
7-8dry red chillies(bedgi)
1 tspn black peppercorn
1 small ball tamarind
½ tspn poppy seeds
7-8 garlic pods
1 tspn turmeric powder
1 teaspoon garam masala
¼ tspn sugar
1 veg maggie cube
Salt to taste
Fresh coriander leaves for garnish
