Fun language facts: "chef" comes from "chef de cuisine," which literally means "chief of the kitchen." In other words, not just any old cook, but the manager who sets the menu for the evening and directs everyone else in a large kitchen. So when subordinate cooks say "yes, chef" they're essentially just saying "yes boss." You're only expected to address them that way if they are, in fact, your "chef" because you're working in a kitchen where they're the boss.

"Chef" is a type of manager, relating to leading _teams_ of cooks in cooking large meals (traditionally high quality meals as well) and thus are expected to have much stricter standards than home cooks who are only preparing for themselves or small families. And as it's a team based job, professional cooking needs to have terminology for various tools and substances it handles.
If you want to be technical, that only applies to the chef _de cuisine,_ otherwise they don't even have anything to do with cooking. Chef by itself just means head (as in family head) or boss. I.e. the chef de cuisine is the head/boss of the kitchen.
English of course cut off an important qualifier.

Saying "Chef" is a sign of respect towards the head and sous chef. It's really no different than saying "sir" to those higher on the food chain in the military. Agree with the pretentiousness of the food being shown off on cooking competitions.

It's a Food and Beverage thing. Chefs get respect. It's not an easy job at the higher levels. Or any level for that matter. It's usually long hours with less fanfare. I, for one, have nothing but respect for the chefs out there doing it right.
