Gotta question your judgement, based on that hideous cacophony you played in the video! What were you thinking?!?

I'm super late to the party, but I've been very curious about this baking technique. Later in the video you have stones on bottom with muffin tin on top, using zebra pot upright (I guess to reheat or finish up). Would it not work doing this from the beginning? It seems like the hassle of the pot being on its side, especially with something in there that might make juice, makes it a better idea to use the pot rightside up, stones on bottom, perhaps some sort of rack holding things midway, etc. Is sideways necessary because you very much need the coals on top, so then the lid opening would be even worse of a hassle? If that's the case, I'm imagining a nice fitted round cake pan, like just the right size to sit on top of the un-lidded zebra, with a small fire in it, with some kind of wire/handle to lift it to check on contents. A cake pan that actually went in a little and the rim being where it stops sliding in (like a cake pan fitted to the zebra) would be perfect, right? Would that make the whole sideways thing unnecessary? Or is there still some benefit?
