The reason why it was broken into 6 parts is because of the architecture of the game engine first created for the PS2. It wasn't sophisticated enough to have recurring enemies 24/7, so there was an experience cap implemented. This substory was created to make up for that and give the player more EXP so they don't lose out on maxing Kiryu's stats. However, since upgrading to the PS3, there has been no need for the experience cap due to the advancements made during development of Ryu ga Gotoku Kenzan! and 3, so it was dropped.
tl;dr, the PS2 was literally not good enough to have 24/7 recurring enemy encounters like in Yakuza 3 onward, so the dev team had to get creative and not only introduce a cap on the encounters, but also break several substories into pieces to allow the player to earn more EXP. There was still the tournament, but uh...well, just be glad we've had some necessary technological upgrades over the years. >_>;;;
The first instances of the Ultimate Essence required you to dizzy the opponent first, IIRC. Then you just needed to press Triangle as a fuck-you button in 0 and 5 (though the latter needed you at red health), and now we're full circle.
In 0, you didn’t necessarily need to stun the opponent to do Ultimate Essence. You just have to hit triangle in front of an enemy when you have at least your 3rd heat bar, and that’s it. Just be sure you aren’t in an R1 stance and too far from the opponent, or it’ll make you do a different heat action.
