Look at how clean Parker's gold is. Then look at all the dirt you see in the pans when Tony Beets or the Hoffmans do a cleanup. 5 percent of what they measure isn't even gold. Parker is by far the best miner on the show, consistently.
Other than building suspense, the scale can start at zero even with that tray there. Though they can put the tray with the gold and measure it, get the weight of the tray and deduct that to get the weight of the gold. I think its still less of a hassle and much accurate just pouring it.
