Enjoyed the video, and I've always used a similar method. Before cutting out, if you fold the fabric in half right sides together you can cut out two flags at a time and they'll be perfectly matched triangles ready to sew. Also avoid fabrics with a directional pattern as half of the flags would end up upside down and to avoid this there's a lot of wasted fabric.

These are lovely
When there's a narrow piece to do, I use a glue stick to hold it in place as I sew. It's flatter and less fiddly than pins.
As long as the glue won't seep and won't touch your needle that's a great tip! x
