How Fish Heads Are Improving New Zealand

  • In Auckland, NZ, The Kai Ika Project was created to utilize fish heads, frames and offal which were previously going to waste. Since September 2016, previously discarded fish parts have been collected from the Outboard Boating Club by Papatūānuku Kōkiri Marae whanau and redistributed to families and community groups in South Auckland who value these fish parts and can make healthy, nutrient-rich meals out of them.

    Southeast Asians and Indians love fish head curry as well. Especially the snapper heads which are delicious. The frame makes delicious broth.

      In West Bengal India we cook fish heads with lentils or fish head with veggies and spinach

    38% being considered a good yield of a field is insanity when you think about how much damage trolling does to get the fish.

    Great to see The Kai Ika Project getting more coverage. They're amazing people that are doing incredible work. We can not see fish being wasted. It's such a precious resource. We to have been able to spend time with the team at The Kai Ika Project and we're humbled by their work.

    In Hong Kong, certain fish heads are considered a delicacy. Especially the big ones which can be steamed with black bean sauce/chili, and it really is EXTREMELY tasty.
    The meat is literally the most tender part of the fish.

    I don't understand the obsession with fillets and wasting half of a good fish in some cultures. Most people in the Mediterranean and Asia eat fish whole. You use your fingers at the end and eat most of the meat you can. My wife is such a surgeon on fish with chopsticks, she won't leave a little piece of meat for cats.

      Like most things nowadays, it's about convenience. People have gotten lazy today. From work to even eating nowadays with uber eats and all that.

      @@selvbilde253 I lived with a guy in university that did not eat any meat that reminded him that it was once an animal. So basically, everything was frozen breaded or minced (like sausage and hamburger patties). The more unnatural it looked, the better he liked it.

    This is awesome, people don't realize fish are the only wild animal that we consume at a mass level. All other animals are farm animals. We can't let fish population vanish.

    So good to see this happening where it is appreciated the most. I've been to that marae, and the work that they do for Mangere and South Auckland is amazing. This would be a great model for other urban areas around Aotearoa NZ. Even having the community gardens in the suburbs

    Also we seem forget fish has a good amount of collagen in it, It makes sense to cook those other parts for bone broths and other recipes, and for the extra meat as well, So healthy. I would love to see a extensional video on other recipes, and how to prep/fillet these fish parts

    It’s a project in an Anglosaxon world to eat sustainably. There’s already thousands of recipes for fishhead stews/curry, fish frames crackers, innards sushi/stew.

      The Anglosaxon world is still living in a hangover from the Victorian age of decadence where America had seemingly infinite resources to plunder and the British had its global colonial empire to exploit. The aristocracy of the time shaped all food trends, usually being as excessive and wasteful as possible - on purpose - just to show how rich they were.

    I knew french lady when I was little, who was a friend of the family, She would make a Bouillabaisse, kind of similar to a Cioppino? where she utilized all of the fish for meat and broth, As a kid I was not that into it, but as I got older my palate changed, Fish stew or in a Curry with a big chunk of bread, is just beyond YUMMY!!!

    Awesome. Well done Scott, Lionel, Sam and Legasea and the Kai Ika Project. Let's hope it is one of many such future developments that are so sorely needed to help families and communities become healthier, more resilient and independent. There are so many projects like this that can be envisioned - all it needs is imagination coupled with some help in funding like you have help organize Scott and then the people to get active and make it work.

    What a great story. My wife and kids were at a local pier when a fishing charter came back and they were just dumping snapper frames. We asked for them and bought home a heap. We made fish stock and soup, curry and Thai style fish cakes. Unbelievable how much was getting wasted either through ignorance or laziness.

    This is fantastic. One of the tastiest fish dinners I have ever had was fried whitefish stomachs, made by a friend of mines wife, an Eskimo gal in Northway Alaska. Other than roe I didn't know you could eat fish offal. The eating of liver, kidney, stomach, chitterlings etc. from land creatures is common...why not fish? Always made me wonder what else might be tasty in there :)

    Roast the heads with salt to eat or make them into soup or stock. Fry the collars and bones. The fins are especially tasty fried

    In my Country Indonesia the most expensive part is the head. You can get 2 filet around 1 kilo with 6$ the head will cost you around 13-25$ alone.

    Beautiful beautiful work! It's amazing how they don't want fish heads in the western countries, whereas in Bangladesh, fish heads are considered the most valuable part of the fish, and usually reserved to be served to the most senior or honored guest during the meal.

    My dad made fish head stew alot growing up with bluefish and mahi mahi. Wasnt big on it as a kid bc the heads and bones freaked me out but it definitely tasted good

    One mans trash is another mans treasure!
    For us the idea of maximum utilisation is conservation. If we can do more with less then that in itself is conservation. If we could feed more families with one fish than we did historically then that means we don't have to take as much fish out of the water. Use it completely, don't waste it!

    Love everything about it. As a kid, I used to ask for the chicken backs and would pick them clean. It was a little tedious but some of the tastiest bits are along the spine and ribs. Eating what some people consider scraps is not new to me. Glad to see more people getting on board with this idea of being more efficient with their harvests.

    Anywhere in central/Southern Europe fish (apart from very small ones) is almost always cooked and served whole, unless you’re eating it raw. That way you can munch on the cheeks, collar and all the good stuff.
    I think it’s a very AngloSaxon thing to filet fish before cooking it.

    Picked through a red snapper head just the other day after I was “done” eating the rest of the entire fish... I swear I was eating all night long there was so much extra meat 😅😂

    I’m Asian and growing up in NZ in the 90s, my mum could get fish heads, fish roe (from fishmongers), ox tails, offals (from butchers) for free or next to nothing.
    Often they used to give us extras coz they didn’t know what to do with them.
    It’s good to see that now pakeha and other NZers are appreciating these “offcuts”, and realise that they can be used for creating beautiful and tasty dishes!

    Indonesian here. Like my Maori brothers, fish head here is also traditionally the most revered part. For example, many Minang-style restaurants offer red snapper, but when the fish head is in stock, usually the restaurant will immediately write something like "Fish head is available", "We have the fish's head" etc. on a piece of paper and stick it on their display window to indicate their precious possession.

    Boil the fish scraps with some vegetables and make a great seafood stock. Use the discarded bits, after boiling, as mulch for a garden.

    Awesome stuff, great to see a philosophically-Maori/Indigenous lead initiative on such a broad reaching platform such as this, as well.
    In an increasingly consumer driven World, hopefully this inspires and encourages more People to stop and think about practices around food consumption and sustainability, especially through these trying times. High time People slow down and think a head to the future of Our Kai.

      Yup, we are Chinese and growing up my dad who worked as a Chinese chef would always tell us that “westerners don’t know a thing about food and are wasteful fools that throw away the best parts of animals”. Oh how true it still is.

    People don't seem to grasp the plenty of flavors and nutrients that fish heads have. Fillets are good, but you seriously need to consider the treasure trove of flavors inside the heads. There's still plenty of meat on those bones.
    You take them home, throw them in a pot, add some broth, a potato... baby you got a stew going!

    I use the whole fish I actually have a fish soup cooking away as we speak the fillets are in the freezer and the head and frame is used for the soup and I got enough meat of the carcass after making the soup stock I filled a pretty large bowl full I'm in not lieing when I say a good 1/3 of the meat came from the head alone and around the bones

    When I used to live in the midwest in the US (unfortunately back on the west coast) stationed in the Military there, I used to gather all the scraps and whatever was left for the fish and throw it back into the lake I caught to give back to it. Never really ate the fish heads though.

    Frames a delicious smoked specially if you have a couple mates around for a beer 🍺🍻and the heads are excellent smoked or made into fish soup 🍲☺️ and the wings omg beautiful and delicious smoked mouth watering goodness 🤤🤤

    Fish filets are pretty cheap where I’m from. Entire fish are a lot more expensive though it depends on the type of fish. Though the cheaper whole fish usually have an unusable head tends to not really have a lot of meat on it and not such good flavor.

    Fish head is a delicacy in South East Asia. We make very yummy spicy sour stew or curry with it. Its to die for.

    in Indonesia there a lot food with based of head fish. curry, soup etc. its not a special case food. but they it at daily basis. maybe is good to get a coverage

    FIsh discards make great fertilizer, the flesh discards can turn into fish amino acids by fermenting them with sugar/molasses for a month and a week. alternatively just bury them. Use it's bones to calcium fertilizer too.

    Believe it or not but fish, or in this case, fish parts make some of the best natural fertilizer anywhere. I'm glad that it's not getting dumped in some landfill where it's not doing anyone any good.

    I use to eat fish heads in college. It freaked out my room mates. The eyes are great but the best part is in the cheeks of some species. Theres a really soft spot thats pure gourmet gold.

    Good job! Yeh I remember in the early 90s they gave away salmon and snappers heads for free. Mom thought it was a sweet deal considering how much they will charge in Asia 😂

    From salt cod, the head & bones create an excellent stock.
