Dative is tricky because it is sometimes placed in the front half of the sentence, and hence sometimes when you hear the sentence you might get the logic of sentence reversed.

It's not shortened. It's complete correct sentence. Your 'herum' and 'spazieren' is just defining the 'gehen' or let's say you add one bit of information how the 'gehen' has to be understood.

In German the case for table is determined by the preposition "unter" - under, so it has nothing to do with the indirect object. He hides my gift under the table is dative - "Er versteckt mein Geschenk unter dem Tisch"

Four cases are nothing. Latvian has 7 cases, doesn't it? In my opinion (as a German native speaker), the word order in German is the larger problem for foreigners.
Try telling that to someone who has never heard a language before and doesn't even know what the concept of a case is. But yes, word order is always a tricky thing for people, especially with filler words.

I think if you watch the vid enough times t becomes clear. 'I give you' in the vid is actually 'I give TO you' which makes the dative more obvious.
