Yes..we need to add water..as water slowly evaporates from orbeez..

My money plant was in water, it is finally growing after a long time, but the roots of money plant are too long. Long enough if stretched out, they fit in a 2 litre coke bottle. Is it okay if roots wrap into each other and are in a smaller place and can I still use this method for long roots?

yes its ok .generally roots grows like this..
If u want to grow them in water and in small container then u can trim the roots also..

it depends on the atmosphere around u..
Hot temperature increases the evaporation process..
if u seethe shrinkness in orbeez..u can hydeate them
