A Classic Hungarian Dessert - Gerbeaud Slice

  • Delicious homemade Gerbeaud Slice! A perfect blend of nuts, jam, and chocolate in every bite.
    Gerbeaud Slice (Zserbó)
    Ingredients
    For the Dough:
    • 500g (50 dkg) all-purpose flour
    • 200g (20 dkg) unsalted butter, softened
    • 100g (10 dkg) sugar
    • ½ teaspoon salt
    • 1 egg
    • 150-200ml lukewarm milk (adjust as needed for dough texture)
    • 1 teaspoon dry yeast
    For the Filling:
    • 300g (30 dkg) ground walnuts
    • 100g (10 dkg) icing sugar
    • 1 jar (about 300g) apricot jam
    For the Chocolate Glaze:
    • 200g (20 dkg) semi-sweet chocolate chips
    • 2 tablespoons unsalted butter
    Instructions
    1. Prepare the Dough:
    1. Dissolve the dry yeast in lukewarm milk and let it sit for a few minutes.
    2. In a large bowl, combine flour, sugar, and salt.
    3. Add the softened butter, egg, and yeast mixture.
    4. Start with 150ml milk and knead the dough. If needed, gradually add more milk (up to 200ml) until the dough is soft and smooth.
    5. Let the dough rest for 30 minutes.
    2. Shape the Layers:
    1. Divide the dough into four equal parts.
    2. Roll each part into a rectangle that fits your baking pan (9x13 inches or a larger pan for thinner layers).
    3. Assemble the Cake:
    1. Line the pan with parchment paper, or grease and flour it well.
    2. Place the first dough layer into the pan.
    3. Spread a layer of apricot jam, then sprinkle with ⅓ of the walnut-sugar mixture.
    4. Repeat this step two more times with the remaining layers.
    5. Place the final layer of dough on top.
    4. Bake:
    1. Preheat the oven to 370°F (190°C).
    2. Bake for 20-30 minutes, until the top is light golden brown. Be careful not to burn it.
    5. Add the Chocolate Glaze:
    1. Let the baked cake cool completely before adding the glaze.
    2. Melt the chocolate chips with the butter using one of these methods:
    • In a small pan over very low heat, stirring continuously until smooth.
    • Over a double boiler, by placing a heatproof bowl over simmering water and stirring until melted.
    3. Pour and spread the melted chocolate evenly over the cooled cake.
    6. Cut and Store:
    1. Allow the chocolate to fully set before slicing.
    2. Cut only when completely cold-this makes cleaner slices.
    3. Store in a closed container in a cool room temperature before serving.
