Namaskar Chef Ji.....A fantastic tip to cook chopped galic with cold butter/ghee and not heating the butter/ghee 1st. This is a common mistake ppl make and end up with bitter food taste. Secondly, I normally mix lemon & rind together to take any bitterness from the rind pith by cooking togather than adding the rind at the end. Absolutely fantastic work Chef Ji.
