I love your videos. You could make the issue with switching between topics less severe by reading through the questions in advance and then grouping them according to topics. Maybe even wait until you have enough AMA material dedicated to one topic: Ethics AMA, Epistemology AMA, etc.

Regarding your mental block at 29:40, you may be interested in the book “Rethinking Race: The Case for Deflationary Realism” by Michael O Hardimon. Even just the introduction summarises his basic argument. Also, have you ever read any essays by Holly Lawford-Smith, or seen her TH-cam videos? She has some excellent philosophy going on in a very contested field.

So why not really try a live show where you can respond to a live chat stream? I guess one problem is to have a decent number of viewers online, but it would allow you to be more selective and to centre the questions on a general theme, also you might try to impose a guiding time limit (say 50 minutes).

'Ask me anything' is an incredibly ambitious endeavour. Actually you do a credible, well informed job at an almost impossible, marathon task. In truth videos that go on for more than 2 hours are hard to sustain for the listener, let alone for the presenter. I guess your aim is to build up a connection with your audience, with this in mind, you could rethink how to do this, possibly as follow ups to videos, where you take on questions raised in response.
I think it's a very strange/ interesting question as to whether an ethical vegetarian would want to eat meat. I think that say hypothetical perfectly consensual cannibalism wouldn't be immoral- Like if you die in an accident, donate your organs to the needy, and whatever is leftover give to a cannibal buffet that raises money for charity. Idk about you, but I don't really want to eat someone. In the vegetarian meat eating scenario the part that they consider the immoral action is still happening, but that has no similar disgust aversion? Hm.
One reason why there is not a parity between race and gender is that over 99.8% of gender is genetically identified (androgen insensitivity produces a tiny proportion of XY female phenotypes. Race is not well genetically characterised except by differences in probabilities; there are no specific, genetic markers. I am not sure what this means for trans-race and trans-gender; people who attempt to be trans-race tend to be mocked (Michael Jackson could be a case in point); trans-gender is less mocked than used to be the case. Some people are more self-evidently inter-race than could be the case for being inter-sex, I guess they might well be inclined to choose a particular identity according to their situation. Usually I doubt this is much of a problem.

Decide on a number of questions, say, 3-5 each month (or do it bi-weekly). Set a price for having your question answered. Other "fun" options exist to dress it all up. Let there be a user choice each round. Commentators vote by liking their favorite question, and the one with the most votes gets answered for free that round. The other 3 or 4 are paid. I don't know about you, but I think your time and energy are pretty valuable. If people want it, they should put their money where their mouths are.
keep doing AMA's but do them as responses to clusters of similar questions. don't feel the need to answer every question (I suppose it may not technically be an AMA, but whatever), just make a video that compiles clusters of topics and your answers to them and maybe that would reduce the problem of research randomness. I'm just thinking of ways you could cope with the problems you mentioned.
