If departing from a multicultural city like SFO, instead of ordering a Vegan Meal with meal code "VGML", order an Asian Vegetarian "AVML" (Indian style) or Oriental Vegetarian "VOML" (SE Asian style) instead. This way you would get better tasting food.
Great flight report, a shame about the meals, as you said, just how difficult is it to organise a vegan meal? I'm not vegan but eat a HEAP of vegan dishes as I really enjoy them, AF just needs a little more guidance.
