Aappam is made by rice flour, jaggery, dry ginger powder (digestion), sesame seeds, cumin seeds, cardamom for flavour. It is a snack with mild sweetness. Brown colour is due to jaggery.
In Kerala they use more boiled rice with rice they made more types of sweets&Savory & more things also, you are visiting correct street food that's good, you are interacting with local people that's the correct tour of you good wishes akhundadez neyyappam means in oil fried one rice flour with jaggary it has made it will stay for more than one month in normal condition,

it's not that common people in India are not sweet or friendly other times but in big cities people are always busy. because of the huge traffic people are spending big time going from one place to another. festivals give them time to relax and be at their friendliest. people who have time to give to foreign tourists in big cities are generally touts or scammers. but in villages it is completely different. unmatched hospitality in the villages but unfortunately not many foreigners go there.
The sweet is actually called nei appam. It's made from rice flour , jaggery, a bit of ghee, sesame seeds, cumin, and a pinch of dried Ginger powder..It's left to ferment for a few hours and then spoon fuls are dropped into oil and fried.
