Dan based on your interests, the only anime you need are Crusher Joe (which just got a new dvd release), Cowboy Bebop (now on bluray) and Outlaw Star (coming to bluray next month), everything else is either too long or too convoluted, you'll dig these as fun, snappy space opera adventures with spaceships, space pirates and Sci fi antics.
Definitely Samurai Flamenco! I don't really watch anime too often but Samurai Flamenco's story is just one weird move after another, all culminating in a love letter to tokusatsu. fun stuff!
I see some fantastic suggestions here. In addition to those, Outlaw Star kids. Outlaw Star. That will cover your Star Wars wants and Trigun (I believe on Hulu) will cover your Superman wants.

Cowboy Bebop and/or Samurai Champloo. The first is a great mix of Firefly esque bounty hunter wit and action combined with sweet music. If you like Bruce Lee martial arts, this is an easy watch! If you prefer Samurais, go for the other collection.
1. Cowboy Bebop - while most anime's require a huge devotion of ones time if that one hopes to keep up with all the convoluted plot twist, Bebop is a short sweet 26 episodes. And frankly, it's near perfect. Combines sci-fi, western, and philosophical elements with a style all its own. Frankly, the only other one I will vouch for is Naruto. Though it is one of those animes that fits in the "most animes" description in the above paragraph. Recommend doing research in order to figure out which episodes are filler and which are not. OH, also there is Voltron: Legendary Defender; the Netflix reboot of the 1980's toy-peddling done with a lot more emphasis on the story and characters than it's predecessors. And lastly I think the first three seasons of Digimon and even the first two seasons of Pokemon are worth checking out, though they are definitely aimed at a younger demographic. Especially when it comes to Pokemon, past the original series arc and the Orange Islands the show becomes WAY too formulaic.
After seeing this review I am now going to watch at least the first episode on Netflix of One Punch Man to check this out. DAMN YOU TOY GALAXY and your superb videos and catchy humor!
I love OPM. I couldn't imagine how a series based on an over powered guy could be good. But it was. Definitely watch Gurren Lagann. But My Hero Academia might be more up your alley with super heroes.

Just looking for Sci-Fi or superheroes, Cowboy Bebop is a quality action anime that you're likely to enjoy. A slow burn, but it has a great style and memorable characters. It's short too, and the shorter shows are best to start out with. If you've seen One Punch Man (which is coming out with a second season!) you've seen the cream of the crop as far as superhero anime goes. In Japan, the superhero thing just doesn't have the same appeal as it does here in the west. The Dragon Ball shows are tricky. It's a lot of episodes and you kind of love it or hate it. But those who love it swear by it and the brand has maintained popularity for many years. It might be worth checking out, but check out the Dragon Ball Kai version of the show if you're on the fence about it.

But, if you want a REALLY good anime, and I mean a REALLY good anime, I recommend Jojo's Bizarre Adventure. It isn't something most casual anime watchers have seen, and it's not very popular in the US, but it's super popular in Japan.

The crossed arm accessory is a popular one in Bandai's Dragon Ball line. It does make for a great accessory and adds a lot of personality! I personally don't like this figure, but LOVE OPM. I think the physique is really gaunt and slender. The cape on his shoulders makes him look like he has permanent bad posture. Maybe this is passable with his "okay" head, but not for his serious face. His musculature will change in the anime depending upon what mood he's in, but I think this is overall too geriatric looking. I'd love it if Figma or Bandai through the Figuarts line would try to create the action version of Saitama- a bit more detail, a bit more muscle, and a soft goods cape!
that's about my feel on it though I haven't gotten it. I look at bandai's game of death Bruce Lee as a better execution of a similar body type and clothing style. OPM deserves a great action figure but I don't know if there's enough there for a company to take another swing at it.

Well, I strongly suggest you watch Dragonbal...but if you can, try watching the latin american version, it is almost universally recognized as the best dub-even by some japanese folks! Then, Gurren Lagann, that one is more epic in japanese, but whatever language you watch it on, it is a must have! I also suggest Gundam, any series you choose, they all have their charm, personally I like Gundam Wing the most out of nostalgia, but it is't the best one.

If you liked One Punch Man so much, you should watch Mob Psycho 100 since it's largely by the same people.
The only figure I know of that has an accessory that is folded arms is the Captain Marvelous Gokai Red figuarts.

For Gundam I've seen the original Mobile Suit Gundam, Endless Waltz, 08th MS, 0083 and then all the Wing stuff that was released in the US.
