Ford online is saying that platinum isn't recommended for off road at all. ST-line Select and St-line Elite will have the protection plates underneath and meant for off road. This is crazy test driving this type of trim level!
Actually in Europe the Escape (here Kuga) starting from this year as an Active trim level which features a little higher ride and a special off road driving mode. But we do not get the 2L turbo, only 2.5 hybrid with an eCVT and AWD.
Just bought an Escape phev. I bought it for off road possibilities. They say the Bronco and Maverick and Escape are built on the same platform. For me anyhow I just wanted the ground clearance to travel on logging roads where a 2wd will do if there's the ground clearance.
Totally, some strut spacers and all terrain tires will go along way. This chassis shares a lot with the Bronco Sport, so there might be some options there.

I want to take a hybrid and I wonder if the all-wheel drive is different from the regular non-hybrid version and does not overheat. Yes and in general something can or not. Your test is short, unfortunately.
I got a 22 base model awd w the 1.5l for 22k otd but I wouldnt call that standard maybe 27 to 30... but Ive found the interrior to be more robust on the escape than the maverick despite lacking the tech being base model.
I would compare it to the focus I owned one of those for 8 years, damn near the same ride feel with just more body sway due to higher center of gravity. The focus was cheap but had actually pleasant interrior design choices that didnt feel cheap.

I have had 3 escapes, really enjoyed the vehicles, a newer one would be one of my first choices! I am curious to see what Ford will replace this with.

If you care about ground clearance, the EVOS (Monde Sport hybrid) is the best choice, if it would sold in North America.

Those Bridgestone tires suck on pavement, let alone trying them off pavement.
