Roast your Chicken with Mayonnaise

  • Who doesn't love Roast Chicken? Have you ever heard of roasting your chicken with mayo? I am going to test this hack to see if it really is as good as they say.
    As well as the chicken my ingredients include:
    1/3 cup of mayo
    2 tsp All purpose seasoning
    1tsp onion flakes
    1/2 tsp of mixed herbs

    Here's another trick worth doing. After trussing the chicken, but before seasoning the skin, put it on a cookie cooling rack, and use a pour-over kettle to pour boiling water all over it. The skin will tighten up and contract. Then flip the bird over and scaled the back of the bird. A lot of the feather roots and down that haven't been successfully plucked out will be exposed by the skin contracting. I recommend going over the chicken with pliers or a fish bone tweezer to pull all those out,. Also, any patches of dead skin that could stand to be exfoliated become apparent, so use the tweezers or your fingers to peel those off, then patting it dry and applying seasoning. The scalding process also does something odd to the skin: it makes it roast up really crispy. This trick of scalding the skin of poultry is a trick that Chinese restaurants do to get duck skin crispy. The scalding seems to pre-cook the skin so that it has a major head-start, so when you roast the bird, the fat renders out and leaves the skin crispy.

    I use mayo all of the time for my spice blends when I'm roasting a chicken. I still slather some under the skin as well prior to coating the outside. You'll get a deeper flavor if you use a fork to poke holes into the breast and legs prior to coating the outside. I also use about twice as much mayo spice blend for an even more uniform, golden color all over.
