There's two different kinds of counters in gbf (as far as I'm aware). The first is countering, which requires a successful dodge to engage. The other is reflecting, which requires you to take a hit to reflect damage. A few characters have passive abilities that offer a chance to do this as well. I'm a beginner myself, but that's it to my understanding.
