I imagine in January it might be a good idea to book a few in advance. The town is small so you could easily wander around and book a few for coming days. We were there mid March and only got turned away from one place (an izakaya near O-Yu Onsen) because we didn't have a booking. Note also that some places you can't book, you'll go on a wait list if they are full when you arrive.
