2. Why can I not use my creativity in my instrumentals like mixing with some other song or have a different variation of it ? As you said it needs to be exactly like original one ???

Doesnt work this way , for cover singer youtube give audio royalties to the owner of the song and since you have landed your vocals and visuals you also get a part of it , Win win situation for both the label and cover artist so they claim it.
