    You are so brave! You would appreciate Molly Stevens' book on braising (it just needs more pics . . . what were they thinking?). I, too, have never attempted a brisket. No excuse now, especially since my new apt. has a normal-sized stove that actually works ... Dang, those are nice hot pads . . . said the bishop to the actress . . .

    Tried the brisket for Christmas dinner and it took 8 hours. Luckily it was worth it

    Why would you not salt, drain, and then add the rest of the ingredients?

    I was afraid of cooking the Brisket for 8 hours, would dry it out. But yours doesn't seem to be too dry.
